The Clever Girl’s One-Pan Citrus Herb Salmon

What You Need

  • 2 salmon fillets

  • 1 sweet potato, diced

  • 1 cup Brussels sprouts, halved

  • 1 carrot, sliced

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 1 tsp dried thyme

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • 1 orange, sliced

How to Make It

  1. Preheat your oven to 400°F. While it heats, toss the sweet potatoes, Brussels sprouts, and carrots with olive oil, thyme, garlic powder, salt, and pepper. (Pro Tip: Line your pan with parchment paper for zero cleanup.)
