The Clever Girl’s One-Pan Balsamic Chicken

What You Need

  • 2 chicken breasts

  • 1 cup beets, diced

  • 1 cup baby potatoes, halved

  • 1 cup kale, chopped

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • Salt & pepper

How to Make It

  1. Preheat your oven to 400°F. While it heats, toss the beets and baby potatoes with olive oil, garlic powder, salt, and pepper. Spread them on a sheet pan and roast for 20 minutes.

  2. Add the chicken to the pan. Drizzle with balsamic vinegar and honey, then season with a little extra salt and pepper.

  3. Roast for another 20 minutes, or until the chicken is cooked through and the veggies are caramelized.

  4. Toss in the kale for the last 5 minutes. It crisps up into the perfect crunchy contrast.

  5. Serve warm and let the flavors make you forget it’s still winter.
