The Clever Girl’s One-Pan Spring Veggie Stir-Fry

What You Need

  • 1 lb shrimp, peeled & deveined

  • 1 cup snap peas

  • 1 cup asparagus, chopped

  • 1 bell pepper, sliced

  • 2 tbsp soy sauce

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1 tsp ginger, grated

  • 2 cloves garlic, minced

How to Make It

  1. Heat olive oil in a large pan over medium-high heat.
    Once hot, toss in the shrimp and cook until pink (about 2-3 minutes per side). Remove from the pan and set aside.

  2. Sauté the veggies.
    Add snap peas, asparagus, and bell peppers to the same pan. Stir-fry for 5 minutes until tender-crisp.

  3. Bring in the flavor.
    Add garlic, ginger, soy sauce, and honey to the pan. Stir everything together and cook for another 2 minutes.

  4. Toss the shrimp back in.
    Stir to coat everything in that delicious sauce, then remove from heat.

  5. Serve immediately and feel like a stir-fry master.
